I am wondering that,

How this AI insights is useful and who can make full use of this feature?

If anyone can share any helpful resource to understand the use case of this feature in Power Query Editor and Power BI that would be very much appreciated.

I haven't used it myself as these functionalities ask  you for a premium license, but I found 2 very good articles that speak about those functions in detail:
Article 1-  Power BI AI Insights to Build Feature Rich Reports (mssqltips.com) (With use case)

"Power BI AI Insights is a feature that contains a collection of pre-trained Artificial Intelligence models that can help you implement better data insights with little effort.

Note: to use AI insights feature it requires a Power BI premium capacity. 

It consists of three functions:

• Text Analytics: Pre-built models for text analysis (Detect language, Score sentiment, Key phrases).
• Vision: Pre-built model for tagging images.
• Azure Machine learning: It allows the use of Azure ML models, you can read more here."
