I want to show all records which record a date which is not the current day.
Ie. I have 5 records [Today is 12.11.2020]
Based on my logic only records 3 and 4 would show as they are NOT today.

Just try creating a caluclated column as follows:
isToday = IF(Tablename[DateCol] = Today(), "Yes", "No")
Now move this column under visual level filter section of your table by selecting it's value to "No".
This will just show you the records for the dates which are not for today's date.
