You can achieve your goal by turn on Per row level function in Subtotal in Visualization Format.
My Sample Matrix visual:
Find Subtotal in Format and expand it.
Turn on Per row level and turn off Level 1, keep Level 2.
Result is as below.

@harirao , Matrix grand total does have the option to hide. You can use isinscope or isfiltered to make it blank
