I would like to include some additional fields (from lookup tables) for my users when they click "export data", but I can't seem to figure out how to include them. Any trick to doing so?

For your requirement, you need to drag the additional fields into this visual, you could just add them into tooltips.
you could try this way as below:
If there is a relationship created between basic table and lookup table, drag these fields into tooltips directly.
if there is no relationship created between basic table and lookup table, create a lookupvalue column in basic table and then drag these lookupvalue column into tooltips.

If they are exporting a table or matrix you could add the additional fields to your visual but make them narrow enough they don't appear in the report. They would still come through when exported though.
