I am using a hyperlink (URL) from a data column to open a PDF. Does anyone know how to use a value from another column to display as the hyperlink instead of displaying the entire URL. For example, the hyperlink is to a PDF for an order that shows as https://abc.com/orders/12345.pdf. I would like to display the order number 12345 as the hyperlink instead of the URL.

According to your description, you need to add hyperlink to a column of your report, right?
Based on my research, the only hyperlink functionality that I'm aware of resides in the text box. So I am afraid that your requirement can not be achieved in current version of Power BI Desktop. If you want this feature, please vote on the link below.

I don't think it's possible, but you may get a nicer display if you set the URL Icon property to ON.
