This seems like it would have a very simple solution, I just cannot find it. I have a table where the cell height is unnecessarily wide. How do I make the rows shorter so that it is just wide enough to fit the text and not have all that additional padding? Thank you.

Usually when that happens, there is a value in each row that requries multiple rows to display. (e.g. a very long sentence). If this is happening to you, then you can either go to Format > Values > Text Wrap and turn that off.
The other issue may be that some of your values have extra (empty) lines at the end of them. To solve this, go into Power Query and trim / clean those empty lines from the value.
