I have a dataset (already build dataset used for power bi reports) for sales pipeline, which is current data, i want to make a snapshot from the same data which should not change, so that i can make it as historical data and the same dataset should be changing data (dynamic) based on real time

There are multiple ways to achieve this
Simplest is to use Power Automate to query your Power BI dataset at regular intervals (e.g., daily).
• Append a timestamp to the data and save it as a CSV file in a SharePoint folder or a local directory.
Load the folder containing all CSV snapshots into Power BI as a single table using the “Folder” connector.
• Ensure each snapshot includes a timestamp column for filtering and analysis.
other way is to implement incremental refresh.
Configure incremental refresh in Power BI for your dataset. This feature allows you to retain historical data while refreshing only recent changes
