Is there a way to copy values to the clipboard while preserving the table format or export them to Excel?

Could you please publish to Service and export data?
In PBI Desktop it exports like that.

But you can export it as-is from Power BI services. Please follow below steps.
Step1: Let's say the following matrix data you want to export it from matrix chart.
Step2: Click on ... of matrix chart and click on export data
Step3: Then it will ask the prompt like below. Select Data Export with Current Layout and Click on Export.
Step 5: Now if you see the below, preserved format of table data saved in csv files as-is.

The format is not preserved. Instead of the pivot format, it is exported in a column-wise layout.
