In my version of PowerBI (latest as microsoft store says) i cant find an option to change the colors of the linear chart, and also i've seen videos of people with different overlay as mine as you can see in the picture (as the "format your visual" is up with the "add data". Even if i search for color in the search bar from the format page, there is no place where i can change those blues to oranges.

under "Line" tab, you should find something like this.
Select the series you want to change color (or any other changes), then go to color section to change the color.

and do you know why my panel look like that and not like this ? i mean the edit space under the space where you select which "data shower" you wanna use

I dont know if there is an option to change UI in PBI, so perhaps because my PBI desktop version is not the latest one, i guess..
But as long as your data is fine, i think that's good. I found some people had an issue to export data when the PBI Desktop version is not the latest version (when they updated the version, the issue is fixed by itself).
