Screenshot above is the matrix I have and I'd like to change Visits field name to be something different depending on whether its BILLABLE or NON-BILLABLE. For the NON-BILLABLE group I'm trying to change the Visits (e) to something else. Is this possible?

the easiest way is to further unpivot your table in power query, and add a "column" giving them a category "Visit/ Other name" based on value billable/ non-billable
