How can I get only one month to show up on my graph depending on which month I choose on the slicer?
For example, currently I have a slicer that shows March/April/May. I'm able to choose one month (i.e. May), and my graph highlights May, however I don't want the other months to show up on the graph. (see screenshot below)

Looking at your image you are not using a slicer you are using a table, that's why the chart is highlighted and not filtered.
Change you table to a slicer and it will work as expected, if you want to keep the table you need to work with edit interactions check the documentation below.
