I am getting to the stage where I have too many tables in "fields" section and would like to group the my 50+ tables into groups if possible. I have a search but the results I'm getting refer to group rows and columns within a tables and not how to group multiple tables.
Is this possible?

I wonder what data sources you are connecting to? Here is a example where data sources are excel files in folder. You may use folder connecter to get the files. Please make sure all tables you want to group have the same columns and the sheet name in each file is same.
All tables have a sheet named 'Sheet' as below.

@CathalSheehan , As of now there is no way to group tables. You can Group measures into a Dummy table that is possible.
I think SSAS model can inherit the group structure and once Semantic Model will be rolled out. there will be more option
