Custom Sort Issues

This should be simple, Im just going mad, have watched youtube videos and still no luck.
I want one of two things, I suspect the solution is similar either

A simple table with the certificates sorted by CertificateID

so the order should be U, PG, 12, 12A, 15, 18, Unknown
but the table not to show CertificateID
I can do it with the CertificateID visible - easy, but as soon as I remove it the order resets

OR
A matrix with column headers of Certificate in the above order

The raw source file Excel is as below (Just using the Certifcates Sheet)

Many thanks in advance
