So I created a data model within excel and used it for one of my reports but when I tried to make a modification to that model I could not. All my information is pulled from an ODBC Server so is it possible to extract the information I need into power bi save that file and import it into service to become an automaticcaly refreshed dataset?

If your dataset contains the on premise data source, then it needs to use the gateway , and add data source to the gateway, as described in Add a data source. After that, you may configure schedule refresh to automatically refresh dataset , see more: :On-premises data gateway , Configure scheduled refresh .
If your dataset not only contains cloud data source but also the on premise data source, note that you also need to select Allow user's cloud data sources to refresh through this gateway cluster option Under Gateway Cluster Settings. See: Merge or append on-premises and cloud data sources.

You should be able to set up a Gateway to allow the Power BI Service to refresh against your on-prem ODBC database. You can then set up scheduled refresh on the published dataset.
