Combo Chart (Stacked Bar Chart)
I'm trying to replicate this visual in BI Desktop, if anyone could help it would greatly appreciated!!!

According to my research and testing, trying to add a custom visual "Drill Down Combo" in PBI add visual can achieve similar effects by placing fields in the dataset and adjusting the format, I compared the screenshots you gave:
I compared the diagram you gave and this visual, I think this visual is from this third-party company developed custom visual, if this visual can not fully achieve the same effect, you can continue to find and search on the official website of this third-party company "Zoom Chart", here is the link:
