I have a rather hefty report (a few hours to refresh) where I'd like to switch the datasource to another server, and publish the report to PBI Service so that it can refresh on there.
Problem is, whenever I switch the data source, it asks me if I want to apply the changes (in which case it starts the hours long refresh on the spot) or discard them (and so the data source goes back to the initial one).
I did try to uncheck 'Include in report refresh' from the Edit Query window but it doesn't seem to make any difference.

Have a look at ALM Toolkit, or the REST API to change data sources.
Caution: Changing data sources on the service will also require you to "re-own" the connection.
