Currently I have a date field with is properly setup but when I used it on a chart it displays as "MMM YYYY". Is there any way to change how that gets displayed? For example I would like it to display just as "MMM" without the year.

I also agree with Salvador. You could create the calculate the calculated column with the formula below.
Month = FORMAT ( 'Table'[date], "MMMM" )
