I've not had this issue for the past year of using Power BI. I want to change the colours of the bars in a visual and it is not letting me and defaulting to the default theme. For the past year I have been able to edit visuals and change their colours, but I'm not sure why it is doing this now.
The bottom image is what the visual used to look like, I have been able to set its colour, but when I go to update it now it remains this colour, and then when I try to remake the visual, it is defaulting to the top colour. It won't change and I don't know how to remove the default theme or change the colours. Why is this happening only now and why hasn't it done this before?
Someone please help me with this I'm losing my mind!

As @amitchandak said , i also test it in my environment with the latested Power BI Desktop version, it works well.
Here are a few steps you can take to potentially resolve this issue:
1. Review Theme Settings: Make sure that the theme settings are not overriding your color choices. You can try applying a different theme and see if that allows you to change the bar colors. If that works, there may be an issue with the custom theme you are using. (Use report themes in Power BI Desktop - Power BI | Microsoft Learn)
2. Custom Theme JSON: If you are using a custom theme, ensure that the JSON file is correctly structured and does not contain errors. You can try importing a different custom theme to see if the issue persists.
3. Software Update: Please try to upgrade or uninstall and install Power BI Desktop

@MICHAELCOOPER15 , I have done this multiple times on the latest version. And I can change the color bar and it is getting saved too
