I have a simple bar chart and want to keep the Y axis labels fixed so ingredient is always at the top and format is always at the bottom, even when the format values are greater. Is this possible please?

If you want to sort by Y axis field name you can do this.
Right click on right top on more options menu of the bar chart (3 dots) > sort by > select Y axis field name.
