I spotted a bug a while ago : my column colors just randomly change when I update the data.
I'm computing data with monthly increments, but the data structure remains stable. I could spot that PBI Desktop freely changes my column colors when I run those updates. This is very annoying when you have to fix several dozens of visuals as a consequence.
On top of that, PowerBI doesn't change the column colors in a smart way. I'm ending up with several categories being displayed in the same color for instance.
I don't think I'm doing anything wrong here, but would you have any trick to get around this PBI bug please ?

Long standing bug.
Try this :
- apply your custom theme in Power BI Desktop
- "touch" the report in the Power BI workspace (edit something meaningless) and save
- republish the app
That _may_ help getting your desired colors to stick. Emphasis on _may_
