I created a dataflow and tested it and then a week later when I access the dataflow, it was a previous version of it. is there a way to restore my latest version of it?

Is your data factory configured a Git repository with either Azure Repos or GitHub. You can check with company if this is there which is useful to track changes and manage data flows.
no we do not have configured a git repository. just straight data flow created to ingest and transform data
