I'm trying to come up with a formula that essentially adds Saturday volumes less than 100 units to Friday's totals, else if volumes exceed 100 units then keep volumes under saturday.
For example, I need 9/3 to be added to 9/2 since it's just volumes that were completed right after midnight.
However here, I would need it to stay under this Saturday date (8/20) since significant volume was processed.

I took a crack at this creating a dataset of volume of items per date.
My understanding of your request is that if the total Saturday volume is less than 100 then the item volumes are added to Friday and Saturday is then 0. If the volume is 100 or greater on Saturday then the item volumes are left as is.
To get the desired result I created a calculated column in the table.
And ended up with the result
