Is there a way to apply a filter via a button?
Example:
If the end-user clicks on the Vanilla button the visualizations will filter by Vanilla (Ice Cream Flavor).

As @lbendlin mentioned, you can use button slicer visual for this functionality.
If you are not able to see new button slicer i your power bi desktop visual panel then update your power bi desktop. You can read its features from here
