This is a recommendation only, as I don't have a way to test without a MongoDB instance.
From your description and the error message this sounds as if the data type of a column in MongoDB is not compatible with the data type of the corresponding column in Power BI Desktop.
While not conducive to connecting to multiple tables, are you able to 'select * from tablename' on the table giving trouble?
