Date - Order by Days/Priority
I have what are possibly two questions.
The first is Days Aging and how do we put in date (days) order?
The second is how to display Priority in Low, Medium, High order.

Create a sort order column or table for each. Then sort your column by that value. For example:
Priority Sort OrderLow 1
Medium 2
High 3
you would just need to click the "sort column by" button under the column tools in the data layer
