What gateway data sources do I have access to ?

Let's assume I am a report developer and I do not have admin permission on the entreprise on-prem Data Management Gateway.

I would like to know which data sources I am authorised to use. Is there an easy way to know this ?

Currently there is no such type of feature available.

After publishing the report, you can able to see the Gateway under the dataset settings then you have access for that datasource. Else you need to share those details to GW admin to configure.
