I recreated my report from scratch and my problem solved itself, without any change in PowerQuery. Thanks for the help !
Adding my comment here in case people come to this post looking for information about web vs web v2.
Web v2 (as of now at least) it is not a Power BI connector, but a Fabric Pipeline one (Web activity in pipeline for example). Tagging for awareness as I've just came across with this thread and not all information is accurate. lbendlin Pronocalme
