As far as I can tell there is no support in Service for grouping by date so as an attempted workaround I created a summary report in Salesforce (technically we use a force.com CRM) that had such grouping. I created a new dataset that imported the regular report and the grouped report and while all the fields are available on the regular report as expected, the only fields available on the grouped report are "Record Count" and "Sale: Net On" the latter of which is the date field used to create the groups in the Salesforce report.
What additional information can I provide you to help troubleshoot this issue?
Hi @jgardner03 were you able to find a solution? As a workaround, maybe you can try to test your connection with a 3rd party connector, whic pulls data directly from SF objects API and would let you manipulate or group your SF data using Power Query once you connect them. I've tried windsor.ai, supermetrics and funnel.io. I stayed with windsor because it is much cheaper so just to let you know other options. In case you wonder, to make the connection first search for the Salesforce connector in the data sources list:
After that, just grant access to your Salesforce account using your credentials, then on preview and destination page you will see a preview of your Salesforce fields:
There just select the fields you need. It is also compatible with custom fields and custom objects, so you'll be able to export them through windsor. Finally, just select PBI as your data destination and finally just copy and paste the url on PBI --> Get Data --> Web --> Paste the url.

When we use SalesForce content pack to get data in service, only dataset is imported. You can create the tabular format report in SalesForce, after importing data, you can use the Matrix visual and place date field in Row groups property to present data.

Unfortunately I don't think I was clear enough in my initial post. I want to group sales by week, month, year in a dynamic form -- WTD, MTD, YTD. Unfortunately it doesn't seem a matrix report allows that kind of grouping. Is that the case or am I doing something wrong?
