How can I change the default thumbnail of a report? I have found the setting to change this for a workspace but I didn't find how to set this for a report.

As for now, you can't change the icon for reports and dashboards in anyway since they are just an indication inside services for the kind of object(Report/Dashboard/Dataset) it is. It's a limitation as for now.
You can submit this as an idea here. Also, you can raise a request with MS Support by clicking here to confirm if anything at all can be done.
