While the dataset is updating the dashboard is showing blank data. Is there a way to keep in cache the old data to avoid the dashboard outage?

If you are a premium user, you might consider using Refresh of query caches, you might be able to improve the performance of any associated reports and dashboards by enabling query caching

Can you confirm that you mean an actual dashboard? Or do you mean a report? How often do you refresh your dataset?
Actually a report. It refreshs once a day.
During the dataset refresh the users will still see the previous data. Only if the refresh succeeded will the new data be shown.
If you experience the blank data then the refresh succeeded but it was done too early, when the data source was still in the " flush" phase of the flush and fill. Change the timing of the refresh.
