Hard to title this post. Anyway, I own a lot of reports and dashboards that I share with many people. One new employee would like to build their own reports and graphs in Power BI desktop. She wants to start learning Power BI on her own but our organization won't grant her access to the databases like I have. Can she link to my shared reports or datasets with her own Power BI desktop file and create her own views and charts? If it's possible, could someone link me to a website or video showing me how to do it? She is currently "Analyse in excel" my reports and building pivot tables but would like to take it a set further in power bi.

Nope, current you can only connection to your own dataset through your power bi account.
I'd like to suggest you share your report to group workspace add she to this group and give edit permission. After these steps, she can get data from power bi service with 'live connection' mode.
