Power BI line color grayed out

I am attempting to assign color to my lines in my visual based on a dimension, "Metric Type" that is not a data point in the visual but the line color option on the visual is greyed out.

I don't have any other options but "All" in the series selection.

After my testing, if no field is put into Legend, only "All" can be seen.

According to my test, if Apply setting to All is selected, the color option will be grayed out.

I hope the above testing is helpful. If the problem persists, I may need to know what specific operations you have performed to better restore your scene. You can show them as screenshots or pbix.
