It looks like Microsoft released some update to Power BI Services over the weekend and now the date parameter value is not shown (even if you select another date yourself) Thought it might be Chrome related, but it's showing the same in Edge.
It's only an issue on the Power BI services hosted in North Central US (Illinois). For some reason our Power BI services hosted in Australia East (New South Wales) is fine, I guess the update was not rolled out to all Services yet.....

We are also facing the same issue and reported the Microsoft bug. Still waiting for the update from the Microsoft team. This is mainly impacted on the date parameters which are created with "default" selection by Query.
