rredford Your pro user leaving the organization won't have any effect on the next user's ability to edit those reports or datasets. Dataset and report ownership can be changed anytime by another pro user. This also includes scheduled refreshes. That being said having a dedicated service account is always a good idea.
We keep swapping ownerships all the time in our organizations. In some cases it's as simple as clicking a button.
