Hi all!
I have a single workspace in Power BI. I have AD groups that need to be granted access to specific dashboards.
For example, Group A can see Dashboard A, and Group B can see Dashboard B.
Is it possible to profile the dashboards this way within a single workspace?

You only need to create 1 app, and you put all five reports into that app. Then you need to create an audience per security division. So, if each report needs to be exclusive to a specific audience, then you will create 5 audiences, assign one report top each audience and the respective security group(s) to that audience.

When you say Dashboard do you mean Power BI reports, or do you actually mean a Power BI dashboard? If you are referring to Power BI reports than the recommended method to share is to publish them in a workspace app and then create two audiences for each group and share the appropriate report with that audience.

Among the limitations, it says that it's possible to create just one app per workspace. I have a workspace with 5 reports, so I would need to create at least 5 apps. Is that possible?

Yes. You can grant read access to specific items within workspaces. You have to not give them workspace permission permissions.
If they just need to consume the reports you could setup a app with audiences. Audiences allow to specific which reports are visible with a app

Yes. If you give app permissions it will grant permissions on the report app and the underlying semantic model, and not the workspace
