How can changes made in PowerQuery editor not change a report in PowerBI service?
Hello,
If you happen to know the answer to this question, I would appreciate it. My manager changed the dataset in the PowerBI desktop file using the PowerQuery editor, and the report on the PowerBI service (web version) was substituted by the one in the Power desktop file. Is there a way to change the dataset in the PowerBI desktop file without affecting the report in the PowerBI service?

Whatever changes that you make in the Desktop file will not affect the Service - until you publish. You can also (if you have permissions) edit the Service file separately (or, in this case you would want to change the dataset).
I think the real answer to this issue is that you have two reports - one labeled as data source A and published and one labeled as data source B.
If you have the same file name and you publish it, the Service will always be overwritten with the Desktop version so if you want to have two data sources in the same report and have them both "active" then name them separately and keep two reports.
