Is there a way that I can add users to an exisiting Power BI workspace, but restrict their access to the corresponding MS Teams Channel?

I don't think there is any way to include to deafult workspace and keep out of teams channel. You should probably create a new workspace and provide access.

Unfortunately, the situation dictates that we have to use the existing workspace in Power BI, we just want to grant access to contractors to help with dev without also adding them to the Teams Channel.
Create a better situation.
Create a new workspace through the Tenant admin, not through Teams. Teams workspaces are evil. (They are classic by default too, which adds insult to injury)
