Hello,
What is the recommended process for updating a Power BI enterprise gateway that is currently sustaining a large amount of data sources that may need to be used at any point during the day or update process? Should an additional gateway be created that runs the same data sources and each is updated independently of each other, but allow the sources to still be used? Essentially, it would be ideal to not have to restrict access to the gateway while the update is taking place if that is even the need.

What you can do is to use the Power BI On-Premise data gateway in a cluster, which will allow it to fail-over to another server in the cluster.
