I added a bunch of charts to a blank page on PowerBI online. I clicked save many times during the process (& can even see in my notifications today that a report was saved) and even opened another tab to confirm the updates were saved & published when I was finsihed. When going to check the charts this morning, there was nothing there - all my work was gone. This has happened to me twice now... I have checked permissions and I have access to publish & update. Any ideas on why these keep disappearing? Is there any way to check history on the online version of powerbi?

I think you can check on Firewall or Security Policy Issues. Clear cache can also be tried. You can also check if TLS 1.3 is enabled on your system. This topic may help you too: Solved: Power Bi sign in disappears after I press 'continu... - Microsoft Fabric Community
For your question about whether there is a way to check the history on the online version of powerbi, it seems that this feature is not available at the moment, you can check this topic: Solved: Need to check version history in Power BI - Microsoft Fabric Community
