For the Q1:

How / where do we edit the existing data models after the migration? At this point we add measures, add tables,... using tabular editor or Visual studio.

After you migrate the data source from AAS to Power BI Premium, you can edit the data model by connecting with Power BI Desktop or Tableau Editor, you can refer to the following link.

Q2:How / where do we create a new datamodel: In Power BI service? or do we keep doing that in Visual Studio?

(1)You can create a new data model in Power BI Desktop, then publish it to the Service. But you need to import data source to it first. You can refer to the following link.

(2) You can create a new data model in Visual studio, then deploy it to Power BI Service.
