It looks like dataflow service doesnt work today at all.
Any operation with dataflow, even basic one like creating blank query doesnt work. Health service indicate that PowerBI works fine but it's not.

I am experiencing this issue today. Cannot edit or create any dataflows, not even a blank query. Internal error status code 500. Im in North America

Reported that issue through Service Health (Microsoft 365 admin center).
Same here. I'm facing lots of problems today.
Opening the advanced editor on a simple query takes minutes!
and the refresh of data sporadically fails due to 1 query at least showing " The operation has timed out ".
Not sure the service is completely down. But for sure it's going through a crisis...
Any feedback from MSFT, please...
