That option is grayed-out, same thing from the power-query editor for each tables

Super UserBy taking over the ownership you have to apply the credentials for the underlying data source again (sec reasons). Go inside of your dataflow and find the option "Manage connections", choose your connection(s) and provide the credentials again.
It should work.
