Hello,
I would like to know what happens with my PBIx if I access a database on a server and work on the Query, Pivot and View with that, then a person take out the database from the server?

You need to check which connection mode you are using.
Import - extracts the data from your database and pulls it into the Power BI Desktop
Direct Query - leaves the data in the database and sends queries to pull the information needed.

If you are using direct query, pbix will not be able to connect to the data source.
