Please refer to the screnshots below. My Power BI service has been having this refresh issue since yesterday (5/9 12AM) and I initially thought it was a transient issue. Any help would be appreciated, thank you!

That looks good, but that only checks it can connect, there could be a subsequent issue with the API after the connection?

The issue may be because my company is phasing out of using Airtable. However, I checked internally and confirmed that I still have full access. I am continuing to try to solve the problem internally as well, but are there any other solutions you recommend I try?
The only other way I can think of is to try using Postman to see what happens when you connect?

It allows you to test out your API calls and see how it works and if something is going wrong how to troubleshoot and fix any issues.

From the error it is saying that it cannot connect to the API. Can you confirm that you can successfully connect to the API via Postman or your application?

Yes, as you can see by the screenshot below the API (Airtable) connects.
