Hi. I'm not sure that it will be exactly like that but similar. You could build a Matrix that has the same exact data. As it is recommended, create a calendar table and relate it with your transaction table. Then drag day name and date columns as columns section in matrix visual (expand the next level with arrows buttons). Create a measure for Predicted total capacity, Predicted total demand, BedDemand status. Add the measures as values. Go to formatting settings of the matrix and change the Values to "show in rows" the values. That should create the same exact data as you can se right there.
For the colors you can go to the formatting settings again and change the background with rules for the Bed Demand status measure. The only thing I'm not sure you can change is the columns colors. I would say you can't.
