Hi,
I have 2 AWS data environments (Ireland, Virginia) with my PBI tenant residing in (Ireland)
Latency is a concern for the Report usage, what can i do to minimize the Latency and speed up report, usage, processing etc?
I have setup the design of the datasource to only have final data, meaning no complexity within report or data views
Not sure what more i can do?

There is not really a great one-off answer that resolves this. There are consultancies that can come in and test all of your network and then give suggestions. You can also contact with Microsoft directly for them to give suggestions. It is much more complex than just the location of the site. What types of data movement does that site allow (and at what speeds, and what do you have to have set up to use it).
