I fixed myself by deleting the visuals, re-creating and setting the default matrix not drilling into the lowest level of details. Still not exactly sure why it started erroring out but that seemed to work. I also updated to the December '21 PBI Desktop version and re-published to the service.

Helper IVThey are all SQL Server Azure Data tables with a few master tables housed on SharePoint.
