Hi,
I am able to create a composite model in Desktop and can see all the data I need to see (I am an admin of the workspace).
It creates a direct query connection to Azure Analysis Services.
When I publish the report to the service, my visuals stop working, and I get an error saying
"There is no gateway to access the datasource...."
Does this mean I need to set up a gateway connection for every single report I want to connect to?
This seems like a massive burden, as I have hundreds of reports I could live connect to and create composite models with.
Is there a way I can do this without having to set up a gateway connection?

So far, to my knowledge, there is no way to achieve it.
The Power BI Dataset you connected with Direct Query connection should had configured the gateway connection before, when you connect it to create composite model and publish it to Power BI Service, you need not configure the gateway connection.

I am able to create a composite model by using a Power BI dataset, which creates a direct query connection.

The issue I am facing is, each time I connect to a new dataset, I need to configure a new gateway connection, which is not practical.
Is there a way to set up one gateway connection that works for all datasets?

So far, to my knowleddge, Power BI Composite mode are created by mix Import and DirectQuery modes, or integrate multiple DirectQuery data sources. Live Connection is not support.
If your have on-premise data source , you need to configure gateway, you just need configure the gateway connection for the composite mode dataset.
