Currently, it is not possible to change the server name in an existing Power BI gateway connection directly, whether through the Power BI Service UI or APIs. The server name field in the gateway’s data source settings is locked once the connection is created, and any modifications to this field require creating a new data source connection.
The only option is to Create a New Data Source with the FQDN

You make a great point—the option to edit gateway connection details, like server names, after setup would really help reduce extra work, especially when managing multiple reports or dataflows. While this feature isn’t currently available, you can submit or vote for it in the official Fabric Ideas forum.
