I've seen a lot of posts about losing card formatting, but still most formatting of a card visual is lost when I pin it to a dashboard :
The category label is gone and the conditional color formatting is gone. (the tite background does't matter). Now the dashboard is completetely useless! Stranger : with a custom visual "advance card" everything works fine. But then I can't set alerts. So why is this basic behaviour not working?

AFAIK, dashboard tiles are snaps of report visuals, they not keep original visual styles when you pin to dashboard.
For your requirement, you can try to use 'pin live page feature' to whole report pages to dashboard, it will keep original report styles.

This is not true. In my post I mentioned that even custom visuals, like the advanced card, keep the formatting. As do all other visuals. Only the standard card gets messed up. Even complete fields are missing on the dashboard. This has nothing to do with the style of the dashboard.

In fact, I mean normal power bi visuals, custom visuals may have different logic to do graph rendering or generation. (normal visual tiles only store, visual type, what table fields used in visual fields, if you modify source visual on the report side, you can find these changes not synced to pinned tiles)
I'd like to suggest you contact to author of this custom visual to get further support for its rendering issues.
